Rick stein beef and macaroni pie

Rick says: ‘I’ve a fantastic affection for the Mediterranean baked dishes of meat, pasta, tomato and kefalotyri – a dry, agency, ewe’s milk cheese, filled with irregular holes. It ranges in color from white via to pale yellow, relying on the grazing of the sheep, and is contemporary and barely sharp-tasting, with a definite flavour of ewe’s milk.‘

Serves 8 – 10

Elements

500g tubular pasta, equivalent to rigatoni, penne or tortiglioni2 eggs, frivolously beaten50g Greek kefalotiri cheese or Parmesan cheese, finely grated2 tbsp melted butter10g contemporary white breadcrumbs

White sauce

115g butter115g plain flour1.2 litres complete milk, plus a little bit extra1/2 tsp freshly grated nutmeg

Meat sauce

4 tbsp olive oil1 medium onion, finely chopped4 garlic cloves, finely chopped2 celery sticks, finely chopped1kg lean beef mince200ml purple wine400g tin chopped tomatoes2 tbsp tomato paste10cm cinnamon stick1/4 tsp floor cloves1 tbsp dried oregano, Greek if possible2 tbsp contemporary chopped oregano3 contemporary bay leavesSalt and black pepper

Technique

For the meat sauce, warmth the oil in a pan, add the onion, garlic and celery and fry till simply starting to brown. Add the mince and fry over a excessive warmth for 3-4 minutes, breaking apart any lumps with a picket spoon because the meat browns.
