I’ve purchased myself my very first casserole pot. Now, there are casserole pots/dishes in the home however I needed my very own one (as foolish as that in all probability sounds). So, after buying my pot, I discovered the proper excuse to make one of many recipes from the Furry Dieters/Bikers e book!

Rooster & vegetable stew

The rationale I made a decision on this explicit meal was down to a couple components:

Elements:

  • 2 tsp dried thyme
  • 4-6 rooster drumsticks or leg quarters
  • 2 tbsp sunflower oil (you could want a splash extra)
  • 4 rashers of smoked again bacon, lower into 1 cm-wide strips (fats eliminated)
  • 2 medium onions, chopped
  • 2 celery sticks, thinly sliced
  • 150 g small chestnut mushrooms, sliced or quartered
  • 500 ml bottle of dry cider (I used Savanna)
  • 300 ml rooster inventory, make with 1 rooster inventory dice
  • 2 bay leaves
  • 400 g Chantenay or different small fats carrots, trimmed and peeled
  • 2 slender leeks, trimmed and lower into 2 cm slices
  • Sea salt
  • Black pepper

Methodology:

  1. Combine the flour and thyme with salt and pepper in a big sandwich/freezer bag. Strip off the pores and skin of the rooster and break the joint of every leg. If like me you used drumsticks, maintain them complete.
  2. Put every portion into the bag, and shake nicely till evenly coated within the flour. Photo 15-03-2013 12 35 00
  3. Warmth the oil in a big pan, over a medium warmth, and fry the rooster till golden brown. As they brown, switch to your beautiful beautiful casserole dish.
  4. Preheat the oven 180C/fan 160C/gasoline mark 4.
  5. Put the bacon, onions, and celery within the pan used for the rooster, and fry for five minutes. They need to change into frivolously browned, so stir usually. Photo 15-03-2013 13 07 49
  6. Add the mushrooms, and cook dinner for an extra 2-4 minutes extra.
  7. Tip all the things into your casserole dish, and sprinkle within the remaining flour from the freezer bag – stir nicely.
  8. Pour half of the cider into the frying pan, and stir with a wood spoon to carry any sediment from the underside. This provides it fantastic flavour! Simmer for just a few seconds, then pour into your dish. Add the remainder of the cider and the inventory, then stir within the carrots and bay leaves. Deliver to a simmer on the hob.
  9. Cowl with the lid and place within the centre of the oven to cook dinner for 1 hour, take away from the oven, and stir within the leeks.
  10. Put it again within the oven and cook dinner for an extra 40 minutes, with the sauce turning into thicker.
